چکیده مقاله
Deu to the importance of saffron as one of the Iran's export products,
as well as having diverse medicinal properties and its wide application
in the food industry, the evaluation of its physical properties and
microbial contamination is of particular importance. Therefore, in this
research, 25 saffron stigma samples from different regions of Iran
were prepared and their physical and microbiological traits were
measured in the first six months of 2024. The results showed that no
samples contained artificial colorants and foreign matter related to the
environment. In addition, Escherichia coli contamination was not
observed in any of the stigma samples. The total number of
microorganisms and molds in the stigma samples were much lower
than the prmitted amounts in the national standard of Iran.
Accordingly, all the examined samples were in full compliance with
the national standard NO.259-1 and ISO 3632-1 in terms of physical
characteristics and with the national standard No. 5689 in terms of
microbiological properties.
